|Description: Meal planning, service, and structure. Includes various types of meals, when and by whom they would be eaten, rituals, and etiquette.
What is Honzen Ryōri? What are Tenshin? Replicating a pre-modern meal involves more than just cooking a bunch of pre-modern recipes. Pre-modern meals were composed of a variety of food items assembled together and presented in a manner specific to a particular culture, the occasion of the meal itself, and often reflected dietary theory along with religious and secular strictures. We will discuss the structure of pre-modern Japanese meals, the various types of meals consumed, and the cultural background for these meals.|
